Apple-Cranberry Stuffing

Oh Stuffing! This Recipe Will Go Perfect With The Rest of Your Feast.

Now full disclosure this is not a recipe I have made before, but I recently came across it and thought it sounded amazing. I will be trying this delicious recipe for Thanksgiving this year and I am so excited. This also goes with the apple and cranberry theme with the sweet potato recipe I just posted. These two recipes will be amazing paired together to go with your beautiful turkey. Make this a sweet and savory themed dinner to shake things up! This spin on the traditional stuffing will have your family asking for thirds! I found this recipe in a Thanksgiving themed EatingWell Magazine from last year. I can't wait for Thanksgiving day to make this recipe and try something new. Trying new recipes this year is a great way to get excited for Thanksgiving during Covid if you can't celebrate like you normally do. Adding new traditions can be a great way to put a fun spin on 2020.
Ingredients
20 ounces cubed bread (I use Martin's Potato Bread Stuffing Cubes)
2 tablespoons extra-virgin olive oil
1 1/2 cups diced celery
1 1/2 cups diced shallots
2 cups diced apples (3-5 apples)
2 minced garlic cloves
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
4 tablespoons unsalted butter
2 cups no salt added veggie or chicken broth (I usually use stock)
1 cup dried cranberries (or fresh)
1/2 cup chopped walnuts (optional)
1 teaspoon salt
1/2 teaspoon ground pepper
Directions
1) Preheat oven to 275 F. Spread bread on a large baking sheet. Bake until dry to the touch about 30 minutes. Transfer to a large bowl.
2) Increase oven temp. to 350F. Coat a 9-by-13inch backing dish with cooking spray or butter.
3) Heat oil in a large skillet over medium-high heat. Add celery and shallots, stirring often, until tender, 3-5 minutes more. Add apples and garlic; stirring, for 30secs. Add rosemary and sage; stirring for 30secs. Scrape the mixture on top of the bread. Melt butter in the pan, scraping up any browned bits, then scrape onto the bread. Add broth, cranberries, walnuts, salt and pepper to the bread mixture and stir to combine. Transfer to the prepared baking dish. Take a large spoon and press into an even layer with the back of the spoon. Coat one side of a piece of foil with cooking spray and cover the stuffing, sprayed-side down. Feel free to put some of the stuffing in the turkey.
4) Bake the stuffing for 30 minutes. Uncover and continue baking until the top is golden brown, 20-30 minutes more. Take out of the oven and enjoy!
I am incredibly excited to give this recipe a try this Thanksgiving. This will be amazing as a dish on its own or stuffed in the turkey.
